    Chardonnay Australia's most planted White grape ? 5 Chardonnay to a winemaker is like a blank canvas to an artist. The base flavour of Chardonnay is generous, but relatively neutral thus the winemakers' individuality can be expressed through the winemaking techniques used. Oak usage, yeast lees contact and malolactic fermentation are just some of the ways a winemaker can influence the style of Chardonnay. The style of Australian Chardonnay is difficult to categorise. Grown in warm climates, such as the Riverland or Sunraysia, the flavours are opulent, ripe and uncomplicated and the structure is mouth filling and rounded. Flavours such as ripe peach, fig and melon are common in these wines. In cooler climates, such as the Yarra Valley and the Adelaide Hills, the structure is tighter and leaner, with flavours of lemon, grapefruit and green apple. Secondary characters of nuts, toast and vanilla come from oak contact whereas butteriness comes from malolactic fermentation and creaminess from yeast lees contact. ? Due to the highly oaked styles of the early nineties, many people boycotted Chardonnay, preferring instead the fresher, more delicate white wine varieties. However winemaking techniques are vastly different today, allowing for strong regional fruit expression and greater restraint and complexity. Although its plantings are quite small, they are expected to significantly increase over the next ten years. Sauvignon Blanc is used to make fresh, vibrant wine styles with none of the heaviness of Chardonnay or the floral tones of Riesling. Its flavour profile is in harmony with Semillon and consequently these varieties are often blended together. Australia's best Sauvignon Blanc comes from the cool to cold regions, where varietal expression is at its strongest. The flavour spectrum of Sauvignon Blanc is quite diverse. Upon a backbone of herbaceousness lie tropical fruit, passionfruit and gooseberry. Look a little closer and you may see tomato leaf, spice and flint. The stronger styles have elements of asparagus, capsicum and gun smoke. And winemaking can add tones of oak, butter and yeast. They are a feast for the senses, especially during the heat of summer where their defined acidity adds freshness to the palate. Sauvignon Blanc is most suited to cool-to-cold climate viticulture. It is in these conditions that the true essence of the variety is nurtured and expressed. Cooler climates preserve a grapes natural acidity, which heightens and defines its fl a v o u r.     Aromatic Whites Fresh and Fruity Aromatic whites include wines in which lifted floral and perfumed aromas and flavours are the dominant characteristics. They are generally food friendly. The following grape varieties are classified as aromatic: ? VIOGNIER Viognier is a relatively new white grape variety to Australia that is rapidly gaining a strong following... The most distinctive attribute of Viognier is its stone fruit character, most notably that of apricot. It can also show considerable floral and spice tones. In cooler climates you can see citrus whilst in warmer areas there is more honeysuckle. It has good viscosity due to generous alcohol levels and is similar to Chardonnay in that it has a weighty mid-palate and generous flavour, making it a good alternative to this ubiquitous variety. RIESLING Riesling is an aromatic variety that produces intensely fragrant and flavoured wines of exceptional character. With concurrent high acidity and comparable low alcohol, the wines retain an enviable freshness which many other varieties lack. Oak is not used and the wines are very pure and clean. PINOT GRIS & PINOT GRIGIO There are many synonyms for Pinot Gris. In Alsace, it is known at Tokay Pinot Gris. In Italy, it is commonly referred to as Pinot Grigio and in Germany it is known as Rulnder or Grauburgunder. Gris, meaning grey in French, refers to the colour of the Pinot Gris grapes. As a result, wines made from Pinot Gris often have a slight coppery hue. They have a delicately perfumed aroma with flavours stretching from fresh pear through to tropical fruits. Pinot Gris is similar to Chardonnay in that it has good palate weight and flavour. Perhaps this is not surprising considering they both have similar lineage. ? In Australia, there are two distinctively different styles of Pinot Gris. Firstly, there is a zippy, vibrant style with lemon freshness and crisp acidity. This contrasts with a richer type that has greater body and texture. In both styles, there is often an attractive mineral element that adds complexity.
