    Home of the after hour poutine will be closing its doors La Paryse will soon be closing its doors Customers have until October 27 to go and enjoy their famous burger La Paryse restaurant will be flipping its last burgers at its Ontario Street location. For Paryse Taillefer, who co-founded the burger joint with Sylvie Lamarche (the ''La'' in La Paryse) and has been sole owner since 1996, this is a decision that has been brewing for quite a while: ''Although it is with great pleasure that we serve our clients day after day, we have come to realize that our location is no longer appropriate'', she says. ''That is why I made the decision to stop our business here and search for a new place that will be better suited in order to continue our venture.'' The snack bar owner, Paryse Taillefer, will give herself a few months to find a great spot where La Paryse will live on. La Paryse first opened its doors on December 19, 1980 and has since become an institution in the heart of the Latin Quarter, at the corner of Ontario East and Sanguinet Streets. From now until October 27, you are welcome to go and say goodbye to Paryse and her staff while enjoying one of their legendary burgers. As food critic Philippe Mollé wrote in a January 28, 2011 article for Le Devoir: ''No! La Paryse is not a fast-food restaurant nor a snack bar, but a restaurant where products are well-cho- sen, where people are respected and where the sound of clicking forks and the hubbub of regular customers combime with pure pleasure and become a pause from daily stress.'' Let's hope the next chapter of La Paryse's success story continues with the same tradition of serving quality food and offering a friendly atmosphere.
